Instructions. To a mixing bowl add dairy free milk, chia seeds, maple syrup (to taste), and vanilla. Whisk to combine. Cover and refrigerate overnight (or at least 6 hours). The chia pudding should be thick and creamy. If not, add more chia seeds, stir, and refrigerate for another hour or so. Enjoy as is, or layer with compote or fresh fruit!

In the bowl of an electric mixer fitted with the paddle attachment, beat butter and cream cheese on medium-high speed until smooth and creamy, 1-2 minutes. Add powdered sugar. Add sugar in 2 additions, beating well after each addition until smooth. Add vanilla and salt and keep beating until smooth and fluffy.

1. Smoking hot oil and super-hot oven. It is essential that your oven and the oil that you cook the batter in is smoking hot. You must heat the greased muffin tin for at least 5-10 minutes prior to adding the batter. When you ladle in the batter it should sizzle as soon as it hits the oil.

Instructions. In a heavy bottomed, 3 quart sauce pan, combine the milk, water, sugar, cinnamon stick and rice. Stir to combine. 4½ cups whole milk, 1½ cups water, ¾ cup granulated sugar, 1 cinnamon stick, 1 cup Arborio rice. Bring to an intense simmer (just below boiling) over medium high heat, stirring often.
